  1. Mediterranean Cucumber Rollups
  • Peel the cucumber using a vegetable peeler. Slice them into thin slices using a sharp knife. Do not use the slices which have the seeds in it. Make sure you have 12 workable cucumber slices ready.
  • Each slice of the cucumber should be coated with a pinch of black pepper. Then spread hummus evenly on each cucumber slice. Sprinkle chopped red pepper and crumbled feta on each slice.
  • Now roll the cucumber slices around the filling. Make sure you do not roll them too tight. You don’t want the filling to come out.

  1. Easy Chicken Gyros and Tzatziki Sauce
  • In a food processor, puree ingredients like English cucumber, plain Greek yogurt, minced garlic, chopped dill, lemon juice, salt, and black pepper. Cover and chill it when the dish is ready to serve.
  • With the Mediterranean seasoning, season the chicken breasts. On a medium heat, cook the chicken for about 5 to 6 minutes on each side. Cut it into strips.
  • On a clean surface, lay the pitas. Add lettuce. You can also add chicken, red pepper strips, and onions if you want. Top it with tzatziki sauce and feta. Roll the feta into a tunnel shape or fold it like a sandwich.

  • Preheat the oven to 425 degrees F.
  • Line the baking sheet with oil or with a non-stick spray.
  • Mix balsamic vinegar, olive oil, garlic, oregano and basil in a large bowl; season with salt and pepper, to taste. Stir the mushrooms in it and settle it for 10 to 15 minutes.
  • Thread mushrooms onto skewers and then put them on a prepared baking sheet. Roast it in the oven for 15 to 20 minutes till softened.

  • Mix cucumbers, tomatoes, red onion, kalamata olives and parsley in a large bowl.
  • Mix olive oil, red wine vinegar, garlic, oregano, sugar and salt and pepper in a small canning jar. Cover it with a lid and shake it well until it is blended. Add salt and pepper to it for taste.
  • Pour the dressing on the avocado and spread it to coat. Use the remaining dressing on the cucumber mixture and toss the coat. Add the avocado to the salad and garnish it with feta cheese and serve.

  • To make the sauce, combine minced garlic fresh dill, yogurt, olive oil, lemon juice and cayenne pepper in a food processor. Do it till it becomes creamy. Transfer it to a bowl and cover and chill it until needed.
  • Now mix spices, minced garlic and olive oil in a bowl. Coat the chicken thighs with this mixture and place it on a large tray. Cover it and refrigerate it for 2-4 hours.
  • Cook it on a grill on a medium heat for 5-6 minutes on each side. Serve it with the dill Greek yogurt sauce.
